    Instructions

    To Marinate

    • Combine all the ingredients mentioned in the marination list above without adding water and allow it to rest for about 15 minutes

    To Fry The Veggies

    • Shape the marinated veggies to a small ball size and deep fry them in a pan with medium heat until it turns golden brown in color. Drain and remove it from the oil and keep it aside for later use

    To Prepare Gravy

    • Now in the same pan with the remaining oil, add onion and saute until it turns soft
    • Add the ginger-garlic paste and stir until it is fragrant
    • Now add the chopped tomatoes and wait for it to turn mushy
    • Then add chili, coriander, and turmeric powder to it and combine everything well
    • In a small bowl dilute cornflour in water and add it to the above mixture. This helps to thicken the gravy
    • Now add the fried veggies to the gravy and give it a final toss until everything gets incorporated well. Season with salt, if required
    • Switch off the heat, drizzle lemon juice to the gravy, and garnish it with chopped onion and cilantro leaves

    Serve

    • Now serve the hot street style mushroom/kalaan as it is or with hot tea/coffee
