The first step is to make Marinara Sauce, so to do that, in a pan with medium heat, pour oil, and add onion and garlic. Saute until it turns aromatic
Add the diced tomato and give it a good mix, Allow it to cook for 5 to 7 minutes
Mash the tomatoes using a potato masher until it turns soft and mushy
Simmer the heat and see it with chili flakes, black pepper powder, basil leave and salt. Allow the mixture to cook for 2 to 3 minutes
Remove the sauce from the heat and reserve it for later use
Season the sliced chicken breast with garlic powder, salt, and pepper powder and set aside
In a glass bowl, crack the eggs, salt and give it a good mix until it turns frothy
In a shallow tray, add all purpose flour, cornstarch, panko, parmesan cheese, onion powder, pepper powder, oregano and salt. Combine everything well
Now dip the seasoned chicken breast in the egg mixture and then dredge it in the breading mixture. Makes sure to coat the chicken breast nicely in the breading mixture.
Now Place the breaded chicken breast on an oil greased baking tray. You can also oil spray the chicken breast to avoid the chalky flour layer and it is completely optional
Bake it in the preheated oven at 425°F for about 25 to 30 minutes or until it turns golden
Remove the crispy baked Chicken Breast from the oven and top it with a generous amount of marinara sauce that we prepared in the earlier step
Finally top the sauce with mozzarella cheese, and basil leaves
Bake the chicken breast it in the oven again for 5 to 10 minutes or until the cheese melts
Remove the Crispy Baked Chicken Parmesan from the oven and garnish it with fresh cilantro or basil leaves
Serve this Baked Chicken Parmesan over pasta or enjoy it as it is with your favorite salads, or roasted vegetables.
