In a bowl, add garlic powder, chili powder, pepper powder, salt, and dried rosemary. Give everything a good mix and reserve it for later use

Now cut the zucchini into thick circular shapes. Since Zucchinis cook faster you can also cut them into thick cubes. Feel free to discard the end of the veggie

Core or cut the stem of the bell peppers and cut them into small cubes

Remove the outer skin of the onions and cut them into cubes and separate the layers as shown in the picture. This helps the onions to caramelize while roasting in the oven

Discard the thick stems of cauliflower and broccoli and separate their florets

Cut the potatoes into medium size cubes and I suggest not peeling the skin instead just wash them thoroughly before chopping

Transfer all the chopped vegetables into a bowl and drizzle oil, lemon juice, and prepared seasoning mix. Toss well until everything is incorporated

Now arrange the seasoned vegetables in a single layer on an oil-greased baking tray. Make sure not to overcrowd the baking tray

Roast the vegetables in a preheated oven at 400° F for about 20 to 25 minutes or until the veggies turn crisp and tender
