Start by washing, cleaning & chopping the tomatoes. You can also core the tomatoes and remove the seeds, but I have used them with seeds and pulp here

Transfer the roughly chopped tomatoes into a wide non-reactive pot, and add chopped celery, olive oil, and water

Prep Tomato Juice

Simmer the vegetables for about 30 to 35 minutes until they turn mushy and the soupy consistency

Prep Tomato Juice

Remove the mixture from heat and filter it using a fine mesh strainer. You can filter the mixture in batches to extract the juice. Use a spoon to extract as much juice as possible

Now, add the extracted Tomato Juice to a pan over medium heat and season it with garlic, onion, black pepper, brown sugar, and salt

Bring the Tomato Juice to a boil and then remove it from the heat. Be careful not to over-boil the juice
