Instructions
Heat oil in a medium pan, then add urad dal, fennel seeds, cinnamon, cloves, cardamom, cashews, and curry leaves; sauté until aromatic.
Incorporate onions and continue to sauté until they become soft.
Stir in crushed garlic, sautéing until fully cooked.
Add
ginger-garlic paste
and sauté until the raw aroma dissipates.
Mix in turmeric powder, chili powder, and salt, blending the spices evenly.
Add chopped tomatoes, sautéing until they soften into a mushy consistency.
Pour in water and stir the mixture well.
Introduce the chicken pieces, ensuring they are well coated with the mix.
Cover the pan and let the chicken cook for 7 to 10 minutes.
Remove the lid, sauté further, and allow the chicken to cook for another 7 to 10 minutes.
Sprinkle cumin and pepper powder into the pan, thoroughly mixing them in.
Reduce the heat to a simmer and wait until the gravy starts to release oil on the surface.
Drizzle in the ghee and blend it well into the dish.
Finish by garnishing with chopped coriander leaves before turning off the heat.
