Drain and rinse with cold water to prevent sticking, then set aside.
In a pan, heat 3 tablespoons of oil over medium heat and fry the onion and garlic until golden brown, then remove them to a plate, making sure to keep the oil in the pan for later use.
In a large bowl, combine the cooked noodles, shredded cabbage, sliced carrots, boiled potatoes, the fried onion and garlic, some raw onion, chili powder, tamarind extract, chili flakes, roasted gram powder, and salt.
Pour in the reserved fried oil and toss everything together thoroughly with two spatulas.
Drizzle lemon juice over the noodle mixture and top with fresh cilantro for garnish just before serving.
