Rava Cake, also called Semolina Cake, is a soft, spongy sweet made from semolina or Rava and basic baking ingredients. It's perfect as a tea-time snack or a light dessert for parties.
Start by grinding semolina, granulated sugar, cardamom powder, and a pinch of salt in a blender until it forms a coarse powder.
Next, gently mix in the curd to this mixture until smooth, ensuring there are no lumps. Let this sit for about 15 to 20 minutes.
In a separate bowl, whisk together eggs, milk, and oil to create your wet mix. If you prefer an eggless version, simply replace each egg with ¼ cup of yogurt.
Now, combine the wet ingredients with your semolina-curd mixture, mixing well.
Slowly add sieved wheat flour, baking soda, and baking powder to your mix, using a gentle cut and fold method.
Pour your ready cake batter into a greased cake tin. Bake it in a preheated oven at 350°F for 25 to 30 minutes, or until the cake turns a lovely golden brown.
Once baked, take the cake out of the oven and let it cool for at least 15 minutes.
Garnish the cooled cake with pistachios, then slice it up.
