This Homemade Stir Fry Sauce, blending sweet, savory, and a touch of spice, is a versatile staple in Asian cuisine. Perfect for quick stir-fries, it pairs beautifully with vegetables, chicken, shrimp, fish, tofu, or red meats. The foundation of soy sauce, rice vinegar, and a hint of sweetness enhances every dish.
Start by heating oil in a pan over medium heat. Add ginger, garlic, and dry red chilies, sautéing until they release their aroma.
Add in the soy sauce, chili flakes, brown sugar, honey, rice vinegar, and your choice of chicken or vegetable stock. Stir everything together thoroughly.
Let the mixture reach a gentle boil, then reduce to a simmer for about 3 to 4 minutes to blend the flavors.
Add the cornstarch slurry (specified amount of cornstarch diluted in water) to the pan, stirring continuously to ensure it blends smoothly.
Continue to simmer the sauce on low heat until it thickens into a glossy, saucy consistency, perfect for coating your stir-fry ingredients.
Once thickened, remove the sauce from heat. It’s now ready to use or can be stored for later

Notes
Here are my tips to customize your Teriyaki Sauce just the way you like it:
Spice Level: Adjust the chili flakes to suit your taste. Start with a smaller amount for a milder sauce and add more if you like it hotter.
Sweetness: The balance of honey and brown sugar in the recipe generally provides a well-rounded sweetness. For those who prefer a sweeter sauce, you can taste and adjust these ingredients as needed.
Flavor Depth: Choosing chicken or vegetable stock over water can significantly enhance the sauce’s flavor, offering a richer taste experience.
Use Salt Carefully: Since soy sauce and stock already contain salt, I haven't added additional salt to this recipe. However, taste your sauce and add a little more if needed to suit your preference.
Consistency Adjustments: Depending on the desired thickness of your sauce, you can adjust the consistency by adding a cornstarch slurry (mix a small amount of cornstarch with water) at the end of cooking. This allows you to thicken the sauce if needed, making it perfect for clinging to your ingredients.
Aromatic Enhancements: For an extra layer of flavor, consider sautéing some finely chopped onion or shallots in the saucepan before adding the other sauce ingredients. This will add a subtle sweetness and richness to the sauce.
Acidity Balance: If you find the sauce too sweet or rich, try adding a splash of fresh lime juice. This will brighten the flavors and adjust the flavor balance.
