Oven-Roasted Potatoes are easy to prepare and deliver a crispy outside with a fluffy inside. Made with either red or white potatoes, garlic, and simple seasonings, they pair wonderfully with baked chicken, salmon, or shrimp. Enjoy these as part of a satisfying lunch or dinner.
Start by washing the potatoes thoroughly. Dry them with a kitchen towel and cut into even, medium-sized pieces to ensure uniform cooking, whether using red or white potatoes.
In a large bowl, combine the potato cubes with paprika, garlic powder, chili flakes, black pepper, oil, salt, and dried parsley.
Mix well to ensure each potato piece is thoroughly coated with the seasoning mix, guaranteeing maximum flavor coverage.
Transfer the seasoned potatoes to a greased baking sheet. Spread them in a single layer without overcrowding to ensure they become crispy all around. Optionally, lining your baking sheet with foil or parchment paper can prevent sticking and make cleanup a breeze.
Bake in a preheated oven at 400°F for 25 to 30 minutes, or until the potatoes are golden and crispy.
Once baked, remove the potatoes from the oven and garnish with fresh cilantro or other herbs such as parsley, thyme, basil, or rosemary to enhance the flavor.

Notes
Here are some of my tips for making perfect Roasted Potatoes at home:
Choosing Potatoes: While white potatoes are used in this recipe, don't hesitate to experiment with other varieties like red, russet, Yukon gold, or yellow potatoes. Each type brings a unique texture and flavor, making them all excellent choices for oven baking.
For Crispier Potatoes: To achieve extra crispiness, soak your chopped potatoes in water for 30 minutes to remove excess starch. Be sure to pat them dry thoroughly before seasoning to ensure they crisp up nicely.
Seasoning: The recipe uses a basic garlic and spice blend, but feel free to try your favorite seasoning mixes to personalize the flavor. The right seasonings can transform the dish!
Fresh Herbs: Incorporating fresh herbs can greatly enhance the dish. Consider using Italian herbs such as basil, thyme, rosemary, parsley, or cilantro to elevate the taste and aroma.
Turn During Roasting: Although it's not essential, turning the potatoes halfway through the baking process can help ensure even browning and crisping on all sides.
Finish with a Touch of Flavor: After roasting, while the potatoes are still hot, toss them with a little extra virgin olive oil or a sprinkle of freshly grated Parmesan cheese for added flavor. Freshly cracked black pepper and a pinch of coarse salt can also enhance the taste right before serving.
