    Ingredients Overview

To whip up this delightful almond milk, you only need 2 essentials. Feel free to jazz it up with some optional add-ins for extra flavor or sweetness. Let's dive in.

    • Raw Almonds: I recommend using raw almonds for that perfect flavor we're after. Roasted ones, with their added oils and salt, just don't taste as good in this recipe.
    • Water: I usually go for filtered water to achieve that rich, creamy texture. If you're in the mood for something lighter, just add a bit more water to your mix.
    • Seedless Dates (optional): I sometimes add a few dates to sweeten things up, but it's totally your choice.
    • Salt (optional): A pinch can really enhance the natural sweetness and nutty flavors. But again, it's all about what you like.

    Instructions

    Preparing Almond Milk

    • Begin by placing the raw almonds in a bowl and covering them with water. Let them soak for at least 4 to 5 hours. This softens the almonds, making them easier to blend and helping to release their nutrients.
      Soaked Almonds in water.
    • After soaking, drain the almonds and discard the soaking water. Place the softened almonds into your blender. Add fresh, filtered water for blending, along with dates for a hint of natural sweetness and a pinch of salt to enhance the flavors.
Adding soaked almonds in blender jar.
    • Secure the blender lid tightly. Blend on high for 1 to 2 minutes, or until the mixture looks smooth and creamy. Be patient; the smoother the blend, the creamier your almond milk.
Blending almonds and other ingredients in blender.
    • Set a strainer over a large bowl and line it with cheesecloth. Pour the almond mixture through. The cheesecloth will catch the solids, letting the milk filter through smoothly.

    • Once all the liquid is in the strainer, gather the corners of the cheesecloth and twist to enclose the almond pulp. Squeeze firmly to extract as much milk as possible. The harder you squeeze, the more milk you'll get.

    • Transfer the freshly made almond milk into a serving glass. You can enjoy it immediately for the freshest taste or store it in the refrigerator for later use.

    Chef's Notes and Tips

Here are some of my tips to elevate your homemade almond milk experience:
    • Soaking Almonds Overnight: Let your almonds soak overnight to soften them, making them not just easier to blend but also easier on your stomach. This step unlocks the almonds' full nutritional potential, enhancing your milk's health benefits.
    • Natural Sweetness and Flavor: While I love the health perks of unsweetened almond milk, I often add a few dates for a subtle, natural sweetness. A dash of vanilla extract can also elevate the flavor profile, but remember, these touches are optional and customizable to your taste.
    • Achieving Silky Smooth Milk: For that irresistibly smooth and silky texture, I can't recommend enough using a cheesecloth or a nut milk bag for straining. It's a simple step that makes all the difference in your milk's quality, ensuring each sip is pure bliss.
    • Repurposing Almond Pulp: Don't toss out that almond pulp! It's a versatile by-product that can add fiber and texture to smoothies, baked goods like crackers and brownies, or even your dough for flatbreads or rotis. It's a zero-waste approach that maximizes your ingredients.
    • Reduce Waste: In addition to using the almond pulp in recipes, you can also dry it out in a low oven and then grind it to make almond meal. This gluten-free flour alternative is perfect for baking and cooking.

    Serving and Storage Suggestions

    • Serving: This homemade, dairy-free almond milk is a staple in your kitchen. Pour it over cereal, blend it into smoothies, swap it into your tea or coffee, or use it in your baking. It's a healthy, tasty alternative to cow's milk that easily adapts to a range of recipes and diets.
    • Storage: Keep your almond milk fresh in the fridge for 3 to 4 days, making sure it's in a sealed, airtight container or bottle.

    Almond Milk Benefits

Is almond milk good for you? Absolutely! This vegan and dairy-free alternative is packed with nutrients that do wonders for your body. It's low in calories and sugar, making it a great choice for those watching their intake. Plus, it's naturally free from lactose, which is a bonus for anyone with sensitivities.

When you make almond milk at home, you're steering clear of additives like carrageenan, which can upset some stomachs. Almonds themselves are a powerhouse of vitamin E, supporting heart, brain, and bone health, according to Healthline.

A word of caution: nut allergies are common, so if you're new to almond milk, make sure it's safe for you to enjoy.

    Oat Milk Vs Almond Milk

Almond milk and oat milk stand out in the world of plant-based, dairy-free alternatives to cow's milk. When you pick them off the shelf, they're often enhanced with calcium, vitamins, and other nutrients found in traditional cow's milk. Yet, when we dive into taste, sustainability, and texture, each has its own signature.

When it comes to nutrition, almond milk takes the lead in protein and healthy fats, which are sparse in oat milk. Plus, almond milk is generally lower in calories. On the texture front, oat milk typically has a thicker consistency than almond milk. A word of caution for homemade oat milk enthusiasts: over-blending can lead to a slimy texture, so a gentle touch is key.
