What is Chicken Lollipop?
Chicken Lollipop is a crispy fried chicken starter made using chicken winglets. The winglets are cut in a way that looks like a lollipop and coated with a spicy batter. Then the chicken is deep-fried or baked to get a perfect crispy result.
Even though the fried chicken is enjoyed as it is with your favorite dip or sauces, tossing them with Szechuan Sauce gives a perfect touch of sweetness and spiciness. For a healthy version, you can also grill them instead of deep-frying them in oil.
Not only grilling them helps us to avoid high oil intake but it also delivers a nice smoked flavor to the chicken. Although this recipe is basically made with winglets, I have used the chicken's drumstick part to look like a lollipop. It is also one of the famous appetizers in most Indian restaurants across the world.
Ingredients
The ingredients you will need for this recipe are basic and should be easily available in most Indian groceries. So let's see the ingredients below.
For Marination
- Chicken Drumsticks - I have cut the below flesh of the drumsticks and pushed the remaining meat upwards to create like a lollipop. You can make this easily using drumettes part as well. Since winglets were not handy I did this recipe with drumsticks
- Spice Powders - Chili, turmeric, coriander and pepper powder used to here gives nice flavor and heat to the chicken
- Ginger Garlic Paste - Helps to remove the raw aroma from the meat
- Soy Sauce - Marinating with soy sauce gives a perfect touch of Indo-Chinese flavor
- Flour and Egg - All purpose flour, corn starch, and egg gives the perfect coating that helps to keep the spices within the chicken while frying. And also helps to achieve crispy and juicy fried chicken
For Seasoning the Chicken Lollipop
- Garlic and Onion - Sauteing them in oil gives an unique flavor and taste to the dish
- Szechaun sauce and ketchup - Gives a perfect touch of spicy and sweet notes to your Chicken Lollipop
- Spring Onions - This optional ingredient and I have used it to garnish the chicken
How to make Chicken Lollipop?
To make this Chicken Lollipop, the chicken is first marinated with spice powders and soy sauce. Then it is secondly marinated flours and eggs to make a perfect coating. Then the chicken pieces are fried in oil and seasoned with a special spicy sauce. And this is an Indo-Chinese style recipe that makes use of Szechuan Sauce as one of the ingredients.
Following are the high-level instructions to make this dish. But for simple and easy instructions with step-by-step photos, check out the recipe card below.
1. Marinating Chicken Lollipop
- First Marination - In a bowl add the lollipops, spice powders, soy sauce, ginger garlic paste, salt and give it a good mix
- Rest the Chicken - Allow it to rest for atleast 10 minutes
- Second Marination - After 10 minutes, add in all purpose flour, corn starch and egg. Give them a good mix untill all the ingredients combine well. And now the chicken is ready to be fried
2. Frying the Chicken
- Medium Heat Oil - Now add the marinated lollipops one by one in medium heat oil. This helps the chicken to cook from inside out and delivers crispy chicken. If the oil is too hot, the chicken will burn soon and the inside will not be cooked properly
- Flip and Fry - Fry the chicken on both sides approximately for 7 to 10 minutes or until it is done
- Remove and Reserve - Now remove the fried Chicken Lollipops. Usually some people prefer to eat as it is. Even for my kids I give them right away as the next step is going to be spicy for younger ones. If not reserve them for seasoning
3. Making Seasoning Sauce
- Saute Garlic and Onion - In a pan with medium heat, add garlic and saute until aromatic. Then add the onion and saute until it turns soft
- Add in the Sauces - Now add the Szechuan Sauce, ketchup, vinegar and give a nice mix
4. Seasoning the Chicken
- Toss in the Chicken Lollipop - Add in the fried Chicken to the above mix and toss nicely until sauce mixture coats well on it
- Garnish - Sprinkle some spring onions and remoe from heat
- Hurray ! Now the delicious Chicken Lollipop is ready for you to taste and enjoy. You can enjoy this as a starter for your meal or enjoy with Fried Rice, noodles or other simialr rice dishes
Variations
- BBQ Chicken Lollipop - I have fried the chicken here, you can also grill them in oven to get the BBQ or smoked flavor. You can also use bbq sauce to achieve the similar flavor and taste
- Chicken Wings Lollipop - I have used drumstick part of the chicken since wings were not handy for me, and you can always feel free to use wings if it is available to you
- Sauce - I have used Sczheuan Sauce for seasoning the fried chicken but you can also use chili sauce, buffalo sauce, or other chinese sauces for different taste and flavor
Tips
- For Crispiness - All-purpose flour and corn starch used in the recipe helps to deliver crispy Chicken Lollipops while eggs help to achieve juicy chicken pieces
- Flavor and Taste - Marinating the chicken in spices and soy sauce for at least 10 minutes helps to achieve a perfect taste and flavor to the dish
- Indo-Chinese Flavor - I have used Szechuan sauce for seasoning the fried chicken which gives a perfect Indo-Chinese flavor to the dish
