    • Marinate - Place chicken thighs in a separate bowl and pour oil over them. Add 2-3 teaspoons of the prepared seasoning mix to the chicken, and mix until the seasoning coats the chicken well. Set aside for later use

    • Add ingredients to pan - In a 10x15-inch baking pan, add bay leaves, onion, garlic, 1 teaspoon of leftover seasoning, rice, chicken broth, and butter. Mix well
    • Place - Place the marinated chicken thighs on top of the rice mixture

    • Uncover and Bake - After 40 minutes, remove the foil and continue baking for an additional 10-15 minutes until all the water is absorbed
    • Remove - Remove the baked rice and chicken from the oven and garnish with coriander leaves. Fluff the rice gently, and it is ready to serve

    • 1 tsp Chili Powder
    • 2 tsp Coriander Powder

    Instructions
     

    To Prep Seasoning and Marinate

    • In a bowl, combine chili, coriander, cumin, onion, garlic, black pepper powder, and salt. Mix until well combined
