While boxed mac and cheese offers convenience, making it from scratch elevates the flavor significantly. Crafting it yourself means you can tailor the seasonings and add your favorite toppings.

Traditionally, mac and cheese is baked to achieve a golden crust, but some might prefer the simplicity of cooking it on the stovetop. For today's recipe, we’ll blend both methods—starting with the pasta and cream sauce on the stove and finishing with a quick bake for that extra cheesy crunch.

Whether you want to impress your loved ones or need a comforting dish for your family dinner, gathering, or party, this macaroni and cheese is the perfect choice. Let's start cooking!

    Ingredients and Substitutions Overview

The ingredients for making macaroni and cheese are likely already in your pantry. Let’s take a look at what you’ll need.

Ingredients for mac and cheese on a gray table: milk, elbow macaroni pasta, all-purpose flour, black pepper powder, salt, half and half, butter, and cheddar cheese.Pin
    • Pasta: Elbow pasta also known as macaroni pasta is my go-to for that classic mac and cheese shape, but feel free to use penne, ziti, or any small-sized pasta that you like.
    • All-Purpose Flour: This is key for making a roux, which thickens up the cheese sauce and makes it beautifully creamy.
    • Dairy: I've used a mix of milk and half-and-half to craft a rich and creamy sauce. If you prefer something lighter, low-fat milk works great too.
    • Butter: A must for adding that irresistible buttery flavor and extra richness to your sauce.
    • Cheese: I’ve chosen cheddar for its classic sharp and tangy flavor. You can also mix cheddar with other cheeses like Monterey Jack or Gruyère to enhance the depth and creaminess of your dish.
    • Seasonings: I stick to simple black pepper and salt to enhance the flavors. For a bit more zest, consider sprinkling in some garlic powder, onion powder, paprika, or a dash of cayenne.

    Instructions

    Cooking Pasta

    • Fill a wide pot with water, add a drizzle of oil, and season with salt to taste. Heat the water over medium heat until it reaches a boil. This ensures that the pasta cooks evenly and maintains the right texture.

    • Add the macaroni to the boiling water, spreading it out evenly. Cook it according to the package instructions until al dente, or slightly undercook it since it will also be baked. Stir occasionally to prevent the pasta from sticking or clumping together.

    • Once the pasta is cooked, drain it in a colander and rinse with cold water to halt the cooking process. Set the cooked macaroni aside for later use.

    Preparing Cream Sauce

    • In a pan over medium heat, melt the room temperature butter. Once melted, add the all-purpose flour and whisk thoroughly until the mixture becomes nutty and fragrant and is free of lumps. This step creates a roux, which will help thicken your sauce as you add liquid.

    • Gradually add the room temperature milk and half-and-half to the roux. Pour the liquids slowly to prevent clumps. Continue stirring continuously to ensure a smooth, lump-free sauce.
A pan containing roux with milk and half-and-half added, starting to combine.
    • Keep whisking the mixture until it turns into a smooth, slightly thick sauce. Continuous stirring during this step ensures even cooking and prevents scorching, which contributes to a smoother texture.

    • Turn off the heat and add seasoning powders like black pepper and salt, along with the cheddar cheese. Stir everything until the cheese is completely melted into the cream sauce. Turning off the heat before adding the cheese helps it melt smoothly without separating or becoming grainy, resulting in a perfectly creamy sauce.

    Making Macaroni and Cheese

    • Once the cheese has melted thoroughly into the cream sauce, add the cooked macaroni to the pan.

    • Stir the pasta until it's thoroughly coated in the cheesy cream sauce. You can enjoy the macaroni straight from the pan for a quick and delicious meal. However, for added richness and a golden crust, we'll be baking it in the oven with extra cheese. If you choose not to bake, simply stir in the extra cheese directly into the pan as you would before baking to achieve a similar richness and flavor.

    Baking Macaroni and Cheese

    • Transfer half of the mac and cheese into a baking dish, then sprinkle with half of the grated cheddar cheese suggested for baking. Layer the remaining mac and cheese over this, and top it off with the rest of the cheddar cheese. This layering technique ensures a rich, extra cheesy, and gooey texture upon baking.

    • Bake in a preheated oven at 325°F for about 15-20 minutes, or until the cheese on top becomes golden and bubbly. For a crispy and slightly browned exterior, optionally switch the oven to broil mode and cook for an additional 2-3 minutes. Once finished, remove from the oven and your macaroni and cheese is ready to be enjoyed.

    Chef's Notes and Tips

Here are my essential tips for making perfectly creamy Macaroni and Cheese every time:
    • Cook the Pasta to Al Dente: Follow the package instructions to cook your macaroni, but aim to undercook it by 1-2 minutes less than the suggested time for al dente. This technique prevents the pasta from becoming soggy or mushy, as it will continue to absorb the sauce and cook further when baked in the oven. By doing so, the pasta maintains a firm bite and doesn't get too soft, ensuring a perfect texture in your final dish.
    • Prepare Roux with Caution: Start by melting butter and gradually mix in the all-purpose flour until it becomes fragrant. Monitoring the roux closely is crucial to prevent burning, which can negatively affect the flavor of your sauce.
    • Use High-Quality Cheese: If possible, opt for a block of fresh cheddar and grate it yourself for the best flavor and texture. Pre-grated cheeses often contain additives that can make the sauce grainy and less flavorful. Freshly grated cheese melts more smoothly, guaranteeing a creamy consistency.
    • Bake or Not to Bake?: While mac and cheese is delicious straight from the pan, baking it with an extra layer of cheese on top adds a comforting, crispy finish. If you choose not to bake, simply stir more cheese into the cream sauce for added richness.
    • Additional Add-Ins: Elevate your dish by adding toppings like crispy bacon bits, crushed crackers, or breadcrumbs mixed with melted butter for a crunchy topping before baking.
    • Customize the Seasoning: Basic seasonings like salt and black pepper work well, but feel free to customize. Garlic powder, onion powder, paprika, or a dash of cayenne pepper can enhance the flavors and add depth to your mac and cheese.
    • Baking Pan Size: For this recipe, I used a 9x13-inch baking dish, but if you don't have one available, you can also use an 8x12-inch or an 11x7-inch dish. Either size will work perfectly for achieving delicious results.

    Serving Suggestions

Macaroni and cheese are wonderfully versatile, perfect on its own or as a cozy side dish alongside various meals. Here are some of my favorite pairings that I often serve to my family for a complete and satisfying meal:

    • Meat Dishes: Enhance your mac and cheese with hearty options like bacon, sausages, steaks, or various chicken dishes like chicken nuggets, popcorn chicken, chicken tenders, and chicken cutlets for a fulfilling meal.
    • Burgers: A classic or cheeseburger goes perfectly with mac and cheese, making for a truly hearty meal.
    • Breads: Pair with garlic bread or any crusty bread to add a delightful crunch. Bread is also great for scooping up any extra cheesy sauce.
    • Salads: Balance the richness with a simple green salad, Caesar salad, or creamy coleslaw, adding a fresh and nutritious twist.
    • Vegetable Side Dishes: For a healthier side, try steamed broccoli, roasted vegetables like Brussels sprouts and carrots, or sautéed spinach. These veggies complement the creamy texture of the mac and cheese beautifully.
    • Fries: Sweet potato fries and French fries are favorites, especially with fried chicken dishes like classic fried chicken and fried chicken wings, creating a fast food-style meal right at home.
    • Soup: Offer a lighter side like tomato soup or a vegetable bisque to balance the heaviness of the mac and cheese. It’s a cozy combination, especially good in colder weather.

    Storage Suggestions

Mac and cheese is ideally enjoyed warm straight from the oven for that ultimate comfort food experience. However, if you have leftovers, they can be stored effectively and still taste delicious when reheated. Here are my tips for keeping your mac and cheese fresh for future enjoyment:

    • Refrigerator: First, let the mac and cheese cool to room temperature. Then, transfer it to an airtight container; it will stay good for up to 2-3 days.
    • Freezer: For longer storage, place the cooled mac and cheese in freezer-safe containers or bags. It can be kept frozen for up to 3 months without losing flavor.
    • Reheating: When you're ready to enjoy it again, thaw your mac and cheese in the refrigerator overnight. Reheat it in a preheated oven at 325°F for 15-20 minutes, or until the cheese is bubbly and heated through. To help restore the creamy texture, consider adding a little milk or cream while reheating.
