    Roasting the carrots in the oven helps them to caramelize with a bursting sweet and savory flavor. And it is also one of the easy-to-make dishes that can be enjoyed as a side dish for your meal. And the bonus is it comes all together in just under 30 minutes.

    Here I have used basic seasoning but you can also use seasoning of your choice. I have also listed some of the variations in the tips section for more ideas. So let's start with how to make this delicious and simple dish at home.

    Ingredients

    The ingredients you will need to make this Oven-Roasted carrot are basic pantry components. And it should be also easily available in most grocery stores around. So let's check out what are they below.

    • Carrot - I have used medium size carrots and you can also use baby carrots
    • Garlic - You can use freshly minced garlic for fresh aroma and flavor. But I have used only garlic powder, so feel free to use that's handy for you
    • Herbs -I have used dried parsley for seasoning and fresh parsley for garnishing. And you can also use other Italian herbs like thyme, rosemary, or cilantro leaves
    • Olive Oil - Neutral and healthy oil that helps to caramelize the carrots
    • Other Seasonings - Crushed peppercorns, chili flakes, and salt for mild heat and flavor

    How to Roast Carrots in the Oven?

    The recipe I have shared here is Roasted Carrots with garlic, olive, and herbs that deliver a perfect sweet and savory side dish for your meal. It is also one of the best kid-friendly dishes that your little one asks for. The ingredients used here are vegan-friendly and you can also customize them according to your preferences.     • Wash, peel, and chop - Wash the carrots in running water and peel the skin and chop them. I have cut them large stick cut and you can also cut them in diagonal, or circular shape
    • Season the carrot - In a bowl, add the chopped carrots, garlic powder, chili flakes, pepper powder, parsley, salt, and olive oil. Mix until everything is incorporated well
    • Transfer to the baking sheet - Now transfer the seasoned carrots to an oil-greased baking sheet. Make sure to spread them evenly which helps the carrots to cook properly
    • Bake - Place the baking sheet in the preheated oven at 400 degrees Fahrenheit. Cook the carrots for about 15 to 20 minutes or until it turns fork tender
    • Garnish - Remove the Roasted Carrots from the oven and garnish with fresh parsley leaves. Now the delicious Oven Roasted Carrots are ready for you to taste and enjoy
    • Serving - Serve these Roasted Carrots as a side dish with steamed rice, oven-roasted salmon, or entree for your meal

    How long to Roast Carrots?

    • Roasting Temperature - I have roasted the carrots in preheated oven at 400 degrees Fahrenheit for about 15 to 20 minutes which gives perfect fork-tender carrots
    • To Roast Baby Carrots - You can roast the baby carrots at the same 400 degrees Fahrenheit until it turns fork tender. At times some baby carrots turn soft and tender before the mentioned 15 to 20 minutes time frame, so I would recommend you to keep an eye on them

    Tips

    • Best Flavor and Taste - The seasonings added here give the best sweet and savory flavor to your roasted carrots and you can also customize them according to your preferences
    • For Crispiness - Switch the baking mode to broil for the last 2 minutes to achieve a crispier texture
    • Air-fryer or pan - You can also prepare this dish in an air fryer or pan to achieve similar results
    • Herbs - Even though I have used only parsley leaves here you can also use other herbs like thyme, rosemary, basil, and cilantro leaves for different flavors
    • Honey - You can also season the carrots with honey, maple syrup, or brown sugar to enjoy glazed roasted carrots
    • Spiciness - Adding a bit of curry powder, and paprika gives the perfect spicy notes to your carrots. You can also add grated Parmesan cheese for a cheesy twist
    • Garlic Butter - For a garlicky buttery-rich flavor, season the carrots with classic garlic butter sauce
    • Balsamic Vinegar - You can also use 2 tbsp of balsamic vinegar and maple syrup while seasoning your carrots
    • Other Veggies - You can also add in your favorite veggies like broccoli, potatoes, asparagus, onions, and similar others to enjoy a wholesome meal

    Storage Suggestions

    You can store this dish in the refrigerator for up to 2 days in a closed airtight container. Make sure to reheat them in a pan or microwave before serving them again. You can also broil the carrots for 2 to 5 minutes in the oven to achieve crispiness.
