The ingredients you will need to make these vegan-friendly Roasted Chickpeas are pretty basic. Even though I have mentioned the seasoning powder below, you could use your favorite seasonings to roast the Chickpeas that are available to you. SO let's see what are they below.
- Dried Chickpeas - I have soaked the dried Chickpeas overnight and pressure-cooked them to roast them in the oven and pan. But you could feel free to use canned chickpeas for similar results
- Oil - Any neutral-tasting cooking oil of your choice
- Chili Powder - Adjust the quantity according to your spice tolerance
- Curry Powder - Gives nice flavor to your Chickpeas but you can also substitute it with garam masala powder for similar results
- Salt - Season according to your taste

How to make Roasted Chickpeas?
The recipe I have shared here is How to make crispy Roasted Chickpeas using the oven, pan, and air fryer. It is one of the simple dishes that require minimal ingredients to make from scratch. Roasted Chickpeas are one of the healthy snacks enjoyed by kids to adults and they are a good source of healthy proteins.

Cooking Chickpeas
- Add the ingredients - In a pressure cooker, add the overnight soaked Chickpeas, salt, and 4 cups of water
- Pressure Cook - Close the lid with its regulator on and allow it to cook for 1 whistle
- Open - Switch off the heat and allow the pressure to release and then open the lid.
- Drain and Cool - Drain the Cooked Chickpeas from the water and allow them to cool down completely
- Dry - Dry the cooked Chickpeas with a kitchen towel and reserve them for later use
Oven-Roasted Chickpeas
- Toss the Chickpeas in oil - In a wide bowl, add the Chickpeas and drizzle with oil. Mix well until the oil coats the chickpeas
- Season - Season with salt, ½ tsp chili powder, ½ tsp Curry or garam masala powder, and give it a good mix
- Transfer to Baking Tray - Now transfer the seasoned Chickpeas into an oil greased baking tray. Make sure to spread them evenly as shown in the picture
- Roast in Oven - Now Roast the Chickpeas in the preheated oven at 400°F for about 20 to 30 minutes or until it turns crispy
- Remove and Serve - Remove the Roasted Chickpeas from the oven and it is ready for you to taste and enjoy
Pan-Roasted Chickpeas
- Add the Chickpeas - In a pan with medium heat, pour oil and add 2 cups of drained cooked Chickpeas
- Stir Fry - Stir fry for 10 to 15 minutes or until it turns crispy
- Season - Add salt, ½ tsp chili powder, ½ tsp curry or garam masala powder, and give it a good mix
- Remove and Serve - Now the pan Roasted Chickpeas are ready for you to taste and enjoy
Roasted Chickpeas in Air Fryer
- Prep the Chickpeas - Cook the chickpeas, drain and pat them dry as I have mentioned in the above methods. You can feel free to use canned chickpeas but make sure to drain and pat them dry as well
- Season - Season with your favorite seasonings spices or you can go with spice powders that I have mentioned in the recipe card below
- Preheat the Air Fryer - Preheat the Air Fryer to 390°F and place the seasoned chickpeas in a single layer and roast for 12 to 15 minutes. I would suggest shaking the basket halfway through to achieve the best crispy Roasted Chickpeas
- Remove and Serve - Remove the Air Fryer Roasted Chickpeas and it is ready for you to taste test. If you feel like the Chickpeas need some extra crispiness, you can feel free to air fry them for another 2 minutes
Note: I have used only a minimal amount of seasonings to toss the Chickpeas, so it did not burn them while roasting in an oven or air fryer. But if you are using more spice powders then I recommend adding them after roasting the Chickpeas in the oven or air fryer. This way it will avoid the spice powders from burning

- Cooked or Canned Chickpeas - You can roast Chickpeas using cooked or store brought canned ones. To achieve a crispy Chickpeas, it is important to drain the cooked or canned chickpeas from water and pat them dry completely without any moisture left behind
- Roasting Temperature - Choosing the right temperature is the key to making the best crispy Roasted Chickpeas, so I suggest following the perfect temperature setting to achieve the best results. If the temperature is too high the chickpeas may burn easily
- Pan Roasting - Pan Roasted Chickpeas are less crispier compared to the oven method, but this method also delivers an equally delicious snack
- Seasonings - The best part of making these Roasted Chickpeas is seasoning. You can always feel free to use your favorite spice powders and herbs to make a flavor-packed snack

Crispy Roasted Chickpeas
Ingredients
- 3 cups Chickpeas, soaked overnight (gives ≈ 8 cups cooked Chickpeas)
- 5 cups Water, to cook chickpeas
- 1½ tsp Chili Powder, 1 tsp for pan roasting + ½ tsp for oven
- 1½ tsp Curry Powder, 1 tsp for pan roasting + ½ tsp for oven
- Salt, as needed
- 4 tsp Oil, 2 tsp for pan roasting + 2 tsp for oven
Instructions
To cook Chickpeas
- In a pressure cooker with medium heat, add the overnight soaked chickpeas, salt and pour 5 cups of water
- Close the lid with its regulator on and allow it to cook for 1 whistle
- Open the lid once the pressure is released and drain the cooked chickpeas from water and allow them to cool down. Make sure to completely dry the drained cooked chickpeas with a kitchen towel. (Note: If you are planning to use the canned chickpeas, then I suggest draining them from water and drying them with a kitchen towel as well)
To make Oven-Roasted Chickpeas
- In a wide bowl, add 4 cups of Chickpeas and drizzle with oil. Season with salt, ½ tsp chili powder, ½ tsp Curry or garam masala powder, and give it a good mix
- Now transfer the seasoned Chickpeas into an oil greased baking tray. Make sure to spread them evenly as shown in the picture
- Now Roast the Chickpeas in the preheated oven at 400°F for about 20 to 30 minutes or until it turns crispy
