    • Dried Chickpeas: The foundation of this dish. Soak them overnight and pressure-cook them to achieve the perfect texture. If you're short on time, canned chickpeas are a handy substitute.
    • Oil: Crucial for roasting, it helps your chickpeas become delightfully crispy. Choose any neutral-flavored oil.
    • Chili Powder: This adds a spicy kick. Feel free to adjust the amount depending on how hot you like your snacks.
    • Curry Powder: It gives the chickpeas a warm, aromatic touch. If you prefer, you can use garam masala for a different flavor twist.
    • Salt: A must for seasoning. It enhances the taste of all the other ingredients.

This recipe is all about customization, so feel free to experiment with different seasonings to make it your own!

    Instructions

    Cooking Chickpeas

    • In a pressure cooker over medium heat, add the chickpeas that have been soaked overnight, a pinch of salt, and water to cover them.

    • Close the lid with its regulator and cook until you hear 1 whistle.

    Making Oven-Roasted Chickpeas

    • In a wide bowl, take half of the chickpeas and drizzle them with oil. Season with salt, chili powder, and curry or garam masala powder. Mix thoroughly to ensure all chickpeas are evenly coated.
      Seasoning the Cooked Chickpeas
    • Transfer the seasoned chickpeas to an oil-greased baking tray, spreading them out in a single, even layer. For the best results, avoid overcrowding the tray as this can lead to uneven roasting.

    • Roast the chickpeas in a preheated oven at 400°F (200°C) for approximately 20 to 30 minutes, or until they become crispy. Optionally, shake the tray or stir the chickpeas halfway through roasting to ensure even cooking. Keep an eye on them in the last few minutes to prevent burning.

    • Once done, remove the roasted chickpeas from the oven and let them cool slightly. Allowing them to cool completely can enhance their crunchiness.

    Making Pan-Roasted Chickpeas

    • Heat a large pan over medium heat, add oil, and then add the remaining half of the drained, cooked chickpeas. Stir-fry for 10 to 15 minutes, stirring frequently, until they become crispy and golden brown.
      Pan roasting the cooked chickpeas
    • Add salt, chili powder, and curry or garam masala powder. Mix well to ensure all chickpeas are evenly coated with the spices. For an extra flavor kick, you can also add a pinch of garlic powder or smoked paprika.

    • Your pan-roasted chickpeas are now ready to be tasted and enjoyed.

    Chef's Notes and Tips

Here are some helpful tips for perfect Roasted Chickpeas:
    • Chickpea Preparation: Whether you use cooked or canned chickpeas, ensure they are thoroughly drained and patted dry. Getting rid of excess moisture is essential for achieving that perfect crispy texture. For best results, let them air dry for a few minutes after patting them dry.
    • Even Layer: Spread the chickpeas in a single, even layer on the baking sheet or in the air fryer basket. Overcrowding can lead to uneven cooking and less crispy chickpeas.
    • Roasting Temperature: The key to crispy chickpeas is the right oven temperature. Avoid setting it too high to prevent burning. Aim for a temperature around 400°F (200°C) for optimal crispiness.
    • Oil Amount: Use just enough oil to coat the chickpeas. Too much oil can make them soggy, while too little can prevent them from getting crispy. About 1-2 tablespoons per can of chickpeas is usually sufficient.
    • Pan Roasting: While pan-roasted chickpeas may not be as crispy as oven-roasted ones, they still make a delicious snack. Make sure to keep the heat medium-high and stir frequently to prevent burning.
    • Seasonings: Get creative with your favorite spices and herbs to add a burst of flavor to your chickpeas. Popular choices include smoked paprika, garlic powder, cumin, and nutritional yeast for a cheesy flavor.
    • Air Fryer Method: I have included steps to make roasted chickpeas in the air fryer in the section below. Be sure to check it out for an even quicker and convenient method.

    Roasted Chickpeas in Air Fryer

Here's a quick and easy guide to making delicious Air Fryer Roasted Chickpeas:

    • Prep Chickpeas: Begin by cooking and thoroughly drying your chickpeas. While canned chickpeas work well, make sure to drain and pat them completely dry.
    • Seasoning: Season your chickpeas with your favorite spices, or use the spice mix suggested in the recipe.
    • Preheat the Air Fryer: Preheat your Air Fryer to 390°F and spread the seasoned chickpeas in a single layer. Roast them for about 12 to 15 minutes, shaking the basket halfway through to ensure they crisp up evenly.
    • Serve: Once they're golden and crispy, your Air Fryer Roasted Chickpeas are ready to enjoy. For extra crispiness, give them another 2 minutes in the air fryer.

Pro tip: To prevent spices from burning, consider adding spice powders after roasting. Enjoy your delicious, crunchy chickpea snack!

    Serving Suggestions

These roasted chickpeas are incredibly versatile and can serve as a standalone snack or be mixed into a variety of dishes. Here are my suggestions to pair this easy dish with:

    • Salads: Add a delightful crunch to your salads, enhancing both texture and flavor.
    • Wraps and Tacos: Perfect for wraps and tacos, including chicken tacos, for an added boost of protein and crispiness.
    • Soups: Sprinkle them on top of soups for an extra layer of texture, especially in creamy soups like tomato or butternut squash.
    • Grain Bowls: Add roasted chickpeas to grain bowls made with quinoa, rice, or farro or couscous for a satisfying crunch.
    • Homemade Trail Mix: Mix roasted chickpeas with nuts, dried fruit, and seeds to make a healthy, homemade trail mix.
    • Pasta Dishes: Use them as a garnish on pasta dishes, especially those with lighter sauces, to add a nutty flavor and crispy texture.
    • Avocado Toast: Top avocado toast with roasted chickpeas for a satisfying crunch and protein boost.

    Storage Suggestions

Follow the storage suggestions below to get the best out of your roasted chickpeas.

    • Keep Fresh: Keep both oven-roasted and air fryer chickpeas fresh for up to two days by storing them in a sealed container at room temperature. It's best to consume them by the second day, as they tend to lose their crispness and become chewier.
    • Pan-Roasted Chickpeas: For pan-roasted chickpeas, which are typically less crispy, refrigerate them and consume them the next day for the best texture.
    • Cool Completely: Let the chickpeas cool completely before storing them. This helps maintain their crispiness.
    • Reheating: If your chickpeas lose their crispiness, you can re-crisp them by heating them in the oven or air fryer for a few minutes.
