Chef's Notes and Tips
- Tomato Selection: Opt for ripe, firm tomatoes. Plum or Roma varieties are great due to their meaty texture and low water content, ideal for roasting. Cherry or grape tomatoes are also excellent choices for their natural sweetness and quick roasting time.
- Slicing Consistency: Cut the tomatoes into uniform slices or halves for even cooking. Consistent sizing ensures that all pieces roast at the same rate, preventing uneven cooking. For cherry tomatoes, halving them works best.
- Olive Oil Coating: Evenly drizzle olive oil over the tomatoes. This helps prevent sticking, adds richness, and promotes caramelization. Using a high-quality extra virgin olive oil can make a noticeable difference in flavor.
- Single-layer Arrangement: Place tomatoes in a single layer on the baking tray to avoid overcrowding, which can lead to steaming instead of roasting. Line the tray with foil or parchment paper for easy cleanup and to prevent sticking. If necessary, use multiple trays or bake in batches to ensure even roasting.
- Drizzling Leftover Oil and Herbs: Pour any remaining oil and herbs from the bowl over the tomatoes on the tray for extra flavor and to keep them from drying out during roasting. This step ensures every bit of seasoning is used to enhance the tomatoes.
- Oven Temperature and Timing: Preheat the oven to 450°F (230°C). Roast the tomatoes until they reach your preferred level of tenderness and caramelization, usually 20-30 minutes for larger tomatoes. Keep an eye on them to avoid overcooking, which can make them too mushy. Adjust the time based on the size and variety of tomatoes.
- Roasting Cherry Tomatoes: Halve the cherry tomatoes and season as per the recipe. Due to their smaller size, they roast quickly, typically in 15 to 20 minutes. Keep an eye on them to reach your desired level of tenderness and caramelization.
- Experiment and Adjust: Don’t hesitate to try different seasonings, herbs, or spices. For a Mediterranean twist, use oregano and thyme. For a more robust flavor, add minced garlic and a splash of balsamic vinegar. Adjust cooking times and temperatures to achieve your desired caramelization and taste.

How to Use Roasted Tomatoes?
Roasted Tomatoes are a versatile and flavorful addition to a variety of dishes or can be enjoyed as a standalone side. Here are some of my top recommendations to pair them with:
- Chicken: Pair with grilled or roasted chicken for a tasty, healthy meal. The juicy tomatoes complement the savory chicken perfectly.
- Pasta: Mix into any pasta dish, enhancing flavors with fresh herbs, Parmesan, and olive oil. They add a burst of sweetness and a rich, roasted depth.
- Pasta Sauce: Blend roasted tomatoes with sautéed garlic, onions, and fresh basil to create a rich, flavorful pasta sauce.
- Salads: Add roasted tomatoes to a Caprese Salad with fresh mozzarella, basil, and a balsamic glaze for a classic flavor combination. They also work wonderfully in a Mediterranean Grain Salad, mixed with farro, barley, or couscous, along with other vegetables and a tangy dressing for a hearty, refreshing option.
- Quinoa Bowls: Add to grain bowls with quinoa, roasted vegetables, and a light vinaigrette dressing for a nutritious, flavor-packed meal.
- Polenta or Risotto: Serve over creamy polenta or stir into risotto for added depth and richness.
- Breakfast Eggs: Fold into omelets or scrambles for a savory morning dish that adds a burst of flavor and a healthy dose of vegetables.
- Sandwiches and Burgers: Use as a juicy, flavorful topping that elevates any sandwich or burger with their sweet and smoky taste.
- Bruschetta Mix: Combine with garlic, basil, and olive oil for a delicious topping that pairs perfectly with toasted bread.
- Pizza Topping: Add to pizzas for extra sweetness and depth of flavor, making every bite more delicious and satisfying.
Storage Suggestions
To keep your roasted tomatoes fresh and flavorful, follow these simple storage tips.
- Refrigerating: Store them in an airtight container in the fridge for up to 3-4 days. Keeping them tightly sealed minimizes air exposure, which helps maintain their flavor and texture.
- Freezing: First, let them cool completely. Then, spread them out on a parchment-lined baking sheet to prevent sticking. Freeze until firm. After that, transfer the tomatoes to airtight containers or freezer bags, squeezing out as much air as possible. Don’t forget to label them with the date and contents. They can be kept frozen for up to 4 months.
- Thawing and Using: Thaw the tomatoes overnight in the fridge or toss them directly into your cooking dishes. They're especially good in soups and stews, or sauces, where their softer texture from freezing is a benefit.
