To make this classic Chicken Noodle Soup, you'll need some basic pantry staples. Here's a list of the ingredients and some flexible substitutions to fit your taste:

    • Chicken: You can use chicken breast, thighs, or even leftover roasted or rotisserie chicken as your protein base.
    • Chicken Broth: Homemade stock gives the best flavor, but if you're short on time, low-sodium store-bought broth is a good alternative.
    • Vegetables: Classic choices are celery and carrots, but you can mix it up with broccoli, cabbage, green beans, bok choy or peas for a twist in flavor.
    • Noodles: Egg noodles are traditional, but feel free to use other pasta types like rotini, spirals, angel hair, or vermicelli.
    • Herbs: Finish off with a sprinkle of fresh parsley or cilantro to enhance the soup with a burst of freshness.

    • Aromatics: Ginger, garlic, and onion blend together to give the soup a warm and mildly sweet flavor.
    • Oil: Olive oil is a great choice, but you can use any cooking oil that you like.
    • Black Pepper: Adds a rustic heat to the soup. If you want more spice, try adding chili flakes, chili sauce or hot sauce.
    • Chicken Bouillon: This enhances the overall flavor of the soup. You can also use poultry seasoning or Better Than Bouillon as alternatives.
    • Dried Herbs: Thyme and bay leaves are ideal, but an Italian seasoning blend can work well as a substitute.

    Instructions

    Making Chicken Noodle Soup

    • In a large pot or pan over medium heat, add oil along with bay leaves, ginger, garlic, and onions. Sauté these aromatics until they become soft and fragrant, releasing their flavors into the oil.
Sauteing the aromatics in a pan.
    • Incorporate celery, carrots, chicken bouillon, and thyme leaves into the pot. Season with a pinch of salt and continue to sauté until the vegetables start to soften, which enhances their natural sweetness.
Sauteing the vegetables in a pan.
    • Pour in the chicken broth and add the chicken breast or thigh into the liquid. Allow the mixture to simmer gently for 15 to 20 minutes, or until the chicken is thoroughly cooked and the broth has absorbed the flavors.

    • Carefully remove the chicken from the broth. Once cool enough to handle, shred it using a fork to create bite-sized pieces that will blend easily with the soup.

    Chef's Notes and Tips

Here are some tips to make your Chicken Noodle Soup delicious and tailored to your taste:
    • Pre-cook Your Noodles: To prevent the noodles from becoming too mushy and soaking up all the broth, cook them separately until just under al dente and add them to the soup just before serving.
    • Salt Watch: Be cautious with salt. Egg noodles and store-bought broth often contain enough salt. Taste before adding more. If your soup is too salty, dilute it with water or add unsalted mashed potatoes to balance it out.
    • Heat: I usually use ground black pepper for a gentle warmth. If you're looking for more heat, try adding chili flakes or a bit of chili sauce.
    • Use a Rotisserie Chicken: For a quick and flavorful shortcut, use meat from a rotisserie chicken. It adds depth to the soup and saves cooking time
    • Add a Splash of Acid: Give your soup a fresh twist by adding a splash of lemon juice or white wine vinegar right before you finish cooking. This touch of acidity will brighten the flavors and cut through the richness of the soup.
    • Customize the Texture: If you prefer a thicker soup, mix a few tablespoons of all-purpose flour with water to create a slurry. Stir this into your soup to thicken the broth effectively.

    Serving Suggestions

This heartwarming dish is perfect for warming up on a chilly day or serving as a comforting meal anytime. You can enjoy Chicken Noodle Soup as a hearty meal on its own or pair it with sides for a full dining experience. Here are some of my top picks to consider:

    • Roasted Vegetables: Such as carrots, green beans, and broccoli make colorful and healthy sides.
    • Sandwich and Bread: Choose from a Grilled Cheese Sandwich, Garlic Bread, or Crusty Artisan Bread. Any of these are perfect for soaking up the delicious broth and adding a satisfying crunch to your meal.
    • Salad: A light, crisp green salad with a vinaigrette dressing can add a fresh contrast to the warm, hearty soup.
    • Crackers or Croutons: Offer a selection of crackers or homemade croutons for added texture and flavor.
    • Pesto or Chili Oil: A drizzle of pesto or chili oil on top of the soup can introduce an exciting flavor boost.

    Storage Suggestions

Keep your homemade chicken noodle soup in an airtight container in the refrigerator for 3-4 days. You can freeze it for up to one month as well. If you plan to freeze the soup, leave out the noodles because they tend to absorb liquid and become mushy when frozen. Thaw the soup overnight in the fridge, reheat it on the stove, and stir in freshly cooked al dente noodles just before serving.
