Chef's Notes and Tips
- Stock/Broth: Homemade chicken stock brings out the best flavors, but if you're short on time, low-sodium store-bought broth is a great substitute for a well-balanced soup.
- Noodles: While egg noodles (lo mein variety) are my choice, feel free to experiment with other types of egg noodles, or pasta like rotini, spiral, or angel hair.
- Vegetables: Carrots and celery are traditional, but adding broccoli, cabbage, or bok choy can bring a delightful twist.
- Herbs: Don't skip the bay leaves, cilantro, or parsley. They add a burst of freshness and unique aroma to your soup.
- Heat: Ground black pepper is my go-to for mild heat. For an extra kick, consider chili flakes or chili sauce.
- Aromatics: Ginger and garlic are key for a flavorful soup, infusing it with warm and garlicky notes.
- Salt Watch: Be cautious with salt. Egg noodles and store-bought broth often contain enough salt. Taste before adding more. If your soup is too salty, dilute it with water or add unsalted mashed potatoes to balance it out.

Storage Suggestions
Store your homemade chicken noodle soup in an airtight container in the fridge for 3-4 days. It can be frozen for up to a month. For freezing, omit the noodles as they absorb liquid when frozen. Thaw overnight in the fridge, reheat on the stove, and add freshly cooked al dente noodles before serving.
Serving Suggestions
Enjoy Chicken Noodle Soup as a hearty meal by itself or pair it with sides to enrich the experience. Roasted vegetables like carrots, green beans, and broccoli, a grilled cheese sandwich, garlic bread, or crusty artisan bread are excellent choices to complement the soup's flavors and textures, offering a complete and delightful dining experience.
