    Ingredients and Substitutions Overview

To make your own Chili Garlic Sauce, you'll need some simple pantry staples along with fresh ingredients like red chili and garlic. Here’s what to gather:

    • Red Chili: The primary ingredient, fresh red chilies deliver a bold, fiery punch. Jalapeno chilies are used here, but Fresno or Thai chilies are great alternatives to adjust the heat.
    • Garlic: Essential for its distinct, warm garlicky essence.
    • Vinegar: Adds a bright tanginess and acts as a preservative. You can stick with regular vinegar, or try rice vinegar or apple cider vinegar for a slight variation in flavor and enhanced preservation.
    • Brown Sugar: Adds just the right amount of sweetness to balance the heat, enriching the overall flavor profile. You can also substitute it with palm sugar or honey for a different sweetness.
    • Oil: I use Canola oil for its neutral taste, allowing the vibrant flavors of the sauce to stand out, though any mild vegetable oil is suitable.
    • Salt: An essential seasoning, adjust to your preference to enhance the overall flavor balance.
    • Water: Helps blend the ingredients into a smooth sauce.

    Making Chili Garlic Sauce

    • Start by thoroughly washing the red chilies and drying them with a towel. Remove the green stalks or stems. Add the cleaned chilies to a blender along with garlic, vinegar, brown sugar, water, oil, and a pinch of salt.
      A plate with red chilies.
    • Secure the blender lid tightly and blend the ingredients on high until the mixture is completely smooth, ensuring a uniform texture throughout the sauce. Then, carefully remove the jar from the blender.

    • Open the lid and pour the smooth chili-garlic mixture into a saucepan. Place it over medium heat. To capture any remaining sauce, add a little water to the blender, swirl it around, and then pour this into the pan. You can also use this water to adjust the sauce consistency later.

    • Allow it to simmer gently for 7 to 10 minutes to help the flavors blend and intensify. Remove the pan from heat and let the sauce cool to room temperature, enhancing its texture and flavor. Once cooled, it can be used immediately in your recipes.

    Chef's Notes and Tips

Here are some tips to keep in mind when making your own Sweet Chili Sauce:
    • Red Chilies: Always choose high-quality red chilies for the best flavor. This recipe uses Jalapeno chilies, but Fresno or Thai chilies are also great for adding a robust, spicy kick. If using dried red chilies, make sure to soak them in hot water until they soften.
    • Heat Level Adjustment: Control the heat by adjusting the seeds in the chilies. Remove them for a milder sauce or include more for extra heat.
    • Consistency Adjustments: This recipe doesn’t include a thickener, but if you prefer a thicker sauce, you can add 2-3 tablespoons of cornstarch slurry. To make the slurry, just mix 1 tablespoon of cornstarch with water, then blend it into the sauce. If you prefer a thinner sauce, simply add a bit more water while simmering. These adjustments allow you to customize the consistency to your taste.
    • Sugar Varieties: Experiment with different types of sugar like palm sugar, brown sugar, or honey for varied sweetness and depth of flavor. Each type can add a unique twist to the sauce.
    • Chili Garlic Sauce Substitute: If you need a quick alternative to Chili Garlic Sauce, consider sriracha sauce or sambal oelek. Both provide a similar spicy flavor and are excellent in recipes that call for Chili Garlic Sauce.
